I don't do ham though, so I used spinach instead.
Made a bunch this weekend to freeze and I'm eating them for breakfast-on-the-go all week.
Ingredients (makes 8 wraps):
- 4 eggs & 12 egg whites
- 1 frozen package of spinach (defrost in microwave for 3 minutes)
- 1/2 cup of shredded carrots
- 1/2 cup of chopped onions
- 1/2 cup of chopped green pepper
- 1/2 cup of low fat shredded cheddar cheese
- 4 tablespoons of milk
- 1/2 teaspoon of pepper
- 1 teaspoon of italian seasoning
- 8 wheat 8 inch tortillas
- Olive oil spray
Directions:
- In a medium bowl, whisk eggs, egg whites, milk, italian seasoning, & pepper.
- Mix in vegetables & cheese.
- Spray large skillet with olive oil spray and heat.
- Add half of mixture to skillet and cook through. The less eggy you like it, the more you cook it.
- Spoon egg mixture into each tortilla. Wrap up and serve immediately.
- Or wrap in plastic wrap & ziplock bag. Freeze to keep longer.
- Repeat with other half of mixture to make more tortillas.

ReplyDeleteDefrost in the fridge overnight, so it's ready for you in the morning. Heat in microwave for about a minute and a half, wrapped loosely in paper towel.
ReplyDeleteI've ordered the Freezer Pleasers cookbook :) What I would like to know though - what are you doing with all that leftover yolk? Can I substitute the 12 egg whites with 6 whole eggs maybe?
ReplyDeleteYes, good point. It is kind of wasteful. I use egg whites instead of egg yolks to keep the weight watcher points down. If I use 1 egg & 3 egg whites for every four wraps, then I keep the point count down to 3 points per serving. Feel free to use all eggs instead. The freezer pleaser recipe actually calls for 6 eggs for four tortillas, so that is what you should use.
ReplyDeleteYou've listed 1/2 cup of chopped onions twice. I figure there should be only one of them, but does one of them represent some other ingredient.
ReplyDeleteLeslie, thanks for letting me know. That was a mistake. It should be 1/2 a cup of green pepper (or any other vegetable of your choice). I'm a school teacher, I should do a better job of proof-reading!

ReplyDeleteif you don't want to waste yolks, you can also buy the "egg whites" eggbeaters, it may be a bit more pricey but then you aren't wasting all those yolks. cuz i'm right there with you - i want to save the WW pts, but i also don't like throwing away yolks. here's another blog about what to do with leftover yolks, and there're lots of good suggestions:
