I love peanut butter, I love baked oatmeal. How could this recipe go wrong??? I added chocolate chips to take it to another level, but that's optional. It still tastes really good without the chocolate chips.
Ingredients:
5 cups quick cooking oats
1/2 cup brown sugar
2 cup milk
2 tbsp butter, melted
2 eggs
2 tsp baking powder
3/4 tsp salt
2 tsp vanilla
1 cup peanut butter
Directions:
Mix all ingredients in a medium bowl.
Stir together then spread in a greased 13 x 9 pan.
Bake at 350 degrees for 20 to 30 minutes.
Add additional milk, if needed.

How many servings did this make--it sounds like a lot? Do you think it would work with less peanut butter to save on some fat and calories?
