This Week's Dinner Menu

Last week's Twice-Baked Potatoes were a total hit! Turkey Meatloaf was good too. (Look for those posts later on this week).

Last week was pretty busy. I didn't get around to making the Cauliflower & Chicken Casserole, so I'm going to try this week instead. (Look for a post next week). I also didn't get around to using the Tuna Casserole I have in my freezer so I'll use it this week instead.

I'm excited to try out the Mini Chicken Parmesan tonight with our small group. Three-Cheese Kielabasa Bake I've made before but never posted about it. (Look for those posts soon.)

In the meantime, I've posted about Creamy Chicken Noodles (sorry no pictures) & Roasted Eggplant and Tomato Soup before so you can check out those recipes if you are looking for dinner ideas this week. They are great make-ahead freezer meals! Happy Cooking!

This Week's Dinner Menu

I've made Taco Soup several times before. It's amazing, you should try it. It's a great meal to bust out when you have to feed a bunch of people because it's simple to make.

I'm excited to try out the twice-baked taco potatoes recipe that my mother sent me. The rest of the dishes this week are casseroles in my freezer that I never got around to eating last week.

This Week's Dinner Menu

I know what you are thinking...she is obsessed with casseroles. Guilty. I can't help it, a lot of these meals, are waiting for me in the freezer and I used my Freezer Pleasers book or some other resource to find a freezer-friendly recipe. I've noticed that casseroles are one of the most freezer-friendly meals out there. Hence, why I have so many casseroles in my freezer.

I already have the Creamy Chicken & Noodles recipe posted, along with the Mediterranean Tuna Casserole.

Look for the rest of them sometime next week.

This Week's Dinner Menu

So excited for this week. The enchiladas, crab bisque, lasagna, & casserole are already waiting for me int the freezer! WOO-HOO!

I get to celebrate my nieces 2nd B-Day, go on a fancy date with Gerald this weekend, and test out cake pops for the first time with some friends. It's gonna be a great week! :-)

This Week's Dinner Menu

Woo hoo! First Dinner Menu of 2011! Who else is excited??? I know that not everybody cares too much what I'm making for dinner every night of the week. But I enjoy posting my dinner menu for several reasons. (1) It keeps ME organized and gives me a vision for what the week is going to be like. I like to do grocery shopping for the whole week all at once and if I know what I'm making it makes the process easy. (2) It gives my faithful readers some meal ideas. I wind up stealing my recipes from cookbooks or other bloggers so I'm happy to pass them on to you in the same way. (3) It entices you to come back next week to see how each recipe turned out! :-)

Here's what this week looks like. Every dinner will be a new recipe for me. I'm excited to try them all out for the first time. I'm especially excited for Thursday night to try out the spaghetti squash I just picked up at Giant along with attempting to make the homemade Alfredo sauce that was inspired by laughing cow cheese.
