Fabulous breakfast recipe. Makes 8 to 10 pancakes.
2 cups rolled oats
8 tbsp low fat cottage cheese
4 tsp vanilla extract
8 tsp sunflower seeds (or more)
1-2 bananas, peeled & sliced
honey to top
Combine oats, cottage cheese, eggs, & vanilla in a food processor.
Blend until smooth.
Mix batter in a bowl with sunflower seeds.
Head skillet over medium heat and spray with cooking spray.
Pour 1/4 cup (approximately) of batter in skillet, one at a time.
You may have to use spatula or fork to smooth and spread out.
Cook on each side 3 to 5 minutes until golden brown.
Top with bananas & honey to serve.
